Fresh, bright, and packed with protein—these little bites are my favorite way to recharge.

A zesty, feel-good snack—these lemon poppyseed protein balls pack freshness, crunch, and energy in every bite.

I love lemon. Like LOVE lemon! 🙃 These little bites are so fun and easy to make and my little ones help me! That says something for sure! They are packed with protein, full of simple wholesome ingredients like oats and fresh lemon. I don’t have to bake anything, cleanup is a breeze. In under 15 minutes I have healthy snacks ready to grab all week.


No-Bake Lemon Poppyseed Protein Balls


Ingredients


  • 3 scoops vanilla bean protein powder (90g)

  • 1/2 cup rolled oats (50g)

  • 1 tablespoon poppy seeds (9g)

  • 1 teaspoon lemon zest, freshly grated (from about one medium lemon)

  • 6 tablespoons fresh lemon juice (90ml, from about two medium lemons)

  • 6 tablespoons water (90ml)


Directions


  1. Mix dry ingredients.

    In a large bowl, combine the protein powder, oats, poppy seeds, and lemon zest. Stir these ingredients together until evenly mixed and distributed. This will ensure every bite has a balanced flavor and texture.

  2. Add wet ingredients.

    Add the lemon juice and water to the bowl of mixed dry ingredients.

    Stir until the mixture is fully incorporated and forms a cohesive dough.

    The mixture should be just moist enough to hold together without being too sticky.

  3. Shape thte mixture into spheres.

    Using your hands, shape the mixture into 28 small spheres.

    Make sure each sphere is evenly sized for consistent servings.

    If needed, lightly coat your hands with a little water to prevent the mixture from sticking.

  4. Store them for a yummy snack later!

    Place the formed spheres into a Tupperware container, ensuring there’s enough space so they don’t stick together.

    Seal the container tightly and store it in the refrigerator to set.

    Keep them refrigerated until ready to eat for a refreshing and convenient snack.


Other notes...


  • Consistency: Add water slowly; mixture should stick but not be sticky.

  • Texture: Chill at least 30 minutes to set.

  • Dryness: Use level scoops of protein powder.

  • Flavor: Use fresh lemon juice and zest (avoid the white pith).

  • If you find they are too lemony for you simply swap some of the juice for water.


Storage Tips...


  • Fridge: Store in an airtight container for up to 1 week.

  • Freeze: Keep in a freezer-safe container/bag for up to 3 months (use parchment between layers).

  • Thaw: Move to fridge overnight or leave at room temp for ~30 mins. Enjoy cold or at room temp.
